Scientific principles and functional property of foods as affected by preparation processing, and preservation methods. Emphasis on the use of the scientific method and research documentation.

Prereq: DIET 204  with a grade of “C” or better
Coreq: DIET 310  and DIET 314 
Rstr: DIET majors only. Completion of all courses listed in the freshman and sophomore curriculum with a grade of “C” or better in each course and a minimum cumulative GPA of 2.5.
